C\u2019est difficile de ne pas aimer le rougail saucisse. Ce rago\u00fbt aromatique de saucisse et tomates est servi, comme beaucoup de plats r\u00e9unionnais, avec du riz, des l\u00e9gumineuses et un condiment \u00e9pic\u00e9. Pour cette recette, j\u2019ai choisi de cuire des lentilles et de faire un condiment de tomates fra\u00eeches pour accompagner. Nous avons aussi mang\u00e9 pas mal de plats d\u00e9licieux pendant le voyage, et on a pu apprendre un peu sur la cuisine r\u00e9unionnaise, rougail saucisse inclus. Cette version est plus ou moins authentique, \u00e0 part le c\u00e9leri branche, mais je trouve que les morceaux un peu croquants ajoutent une bonne texture. Les proportions des ingr\u00e9dients aromatiques peuvent varier d\u2019un foyer \u00e0 un autre aussi. Ici, je vous partage une combinaison que nous adorons chez nous.<\/p>\n\n\n\n<h2 class=\"wp-block-heading has-medium-font-size\"><strong>C\u2019est quoi un rougail ?<\/strong><\/h2>\n\n\n\n<p style=\"font-size:18px\" class=\"translation-block\">Le terme rougail vient d\u2019Inde, du mot tamoul \"urukay\", qui signifie un fruit vert confit. En fonction \u00e0 qui on demande, le mot aujourd\u2019hui signifie soit le rago\u00fbt soit le condiment \u00e9pic\u00e9. Ici, \u00e7a signifie le rago\u00fbt. Alors, pour qualifier comme un rougail, on dore les oignons avant d\u2019ajouter les tomates. (Pour un autre plat typique de la R\u00e9union, un cari, les oignons sont ajout\u00e9s au m\u00eame temps que les tomates.) Utilisez le type ou la marque que vous pr\u00e9f\u00e9rez, cr\u00e9ole ou autre. Moi, j\u2019ai choisi une saucisse Montb\u00e9liard \u2013pas cr\u00e9ole du tout, mais le r\u00e9sultat est fantastique.<\/li>\n\n\n\n<li style=\"font-size:18px\"><strong>Riz basmati<\/strong> C\u2019est la base de l\u2019alimentation r\u00e9unionnaise. Les locaux mangent du riz presque chaque jour. M\u00eame si le riz est omnipr\u00e9sent \u00e0 la R\u00e9union, il ne pousse pas l\u00e0-bas. C\u2019est tout import\u00e9. L\u2019histoire a laiss\u00e9 sa trace sur la cuisine r\u00e9unionnaise, avec des influences de la Chine, l\u2019Inde, l\u2019Afrique et la France. On peut attribuer l\u2019amour du riz \u00e0 ces deux premiers \ud83d\ude09<\/li>\n\n\n\n<li style=\"font-size:18px\"><strong>Les lentilles <\/strong>Pour de vraies lentilles r\u00e9unionnaises, il faut recommander des lentilles de Cilaos. Ces petites lentilles blondes poussent dans le cirque de Cilaos, et je ne crois pas que beaucoup partent \u00e0 l\u2019export. Sinon, toute lentille blonde ou verte (pas coraille) fonctionnera. Quand on cuit les lentilles, on ajoute le sel en fin de cuisson pour \u00e9viter que la texture durcisse.\n<ul class=\"wp-block-list\">\n<li><em>Parenth\u00e8se sur Cilaos :<\/em> La R\u00e9union est une \u00eele volcanique, avec un volcan actif, le Piton de la Fournaise et trois cirques pittoresques : Cilaos, Salazie et Mafate. La route qui am\u00e8ne \u00e0 Cilaos s\u2019appelle la <em>route des 400 virages<\/em> . Il ne faut pas manger trop de lentilles avant de prendre la voiture\u2026 Les panoramas \u00e9taient incroyables, mais j\u2019ai souvenir d\u2019une route \u00e9prouvante !<\/li>\n<\/ul>\n<\/li>\n\n\n\n<li style=\"font-size:18px\"><strong>Le combava<\/strong>Cette petite agrume \u00e0 la peau grumuleuse est en fait originaire d\u2019Indon\u00e9sie <em>,<\/em> mais pousse \u00e9galement \u00e0 la R\u00e9union. Ses feuilles et la zeste ont un go\u00fbt d\u2019agrume bien frais et prononc\u00e9. Ici, j\u2019utilise une poudre de feuilles de combava dans le condiment. On peut trouver du combava frais ou des feuilles s\u00e9ch\u00e9es dans certains supermarch\u00e9s type Grand Frais.
