Normalement, la viande cuit \u00e0 basse temp\u00e9rature tr\u00e8s longtemps pour rendre la viande tellement tendre qu\u2019elle d\u00e9croche de l\u2019os. C\u2019est cette texture fondante qui rend le plat tellement bien aim\u00e9. Cette recette acc\u00e9l\u00e8re le temps avec un r\u00e9sultat tout aussi d\u00e9licieux. Le secret ? Cuire le porc dans la cocotte-minute. Ce n\u2019est pas traditionnel du tout, mais une fois essay\u00e9e, j\u2019\u00e9tais convertie. Les travers de porc sont tendres, succulents et tombent de l\u2019os \u00e0 chaque fois. Pour compl\u00e9ter ce repas am\u00e9ricain, des accompagnements classiques sont des baked beans (haricots blancs sal\u00e9-sucr\u00e9), coleslaw (salade de chou r\u00e2p\u00e9 en sauce vinaigrette ou cr\u00e9meuse) ou une salade de pommes de terre \u00e0 la sauce mayonnaise.<\/p>\n\n\n\n<h2 class=\"wp-block-heading has-medium-font-size\"><strong>La cocotte-minute :<\/strong><\/h2>\n\n\n\n<p style=\"font-size:18px\">Pour cette recette, j\u2019utilise une cocotte-minute classique de chez SEB. La mienne peut \u00eatre r\u00e9gler pour cuisson de l\u00e9gumes ou de viande, donc je choisis viande (cuisson \u00e0 0,9 bar). J\u2019en ai command\u00e9 une fois \u00e0 un restaurant \u00e0 th\u00e8me am\u00e9ricain, et c\u2019\u00e9tait cuisson rapide, viande pas tendre. Malgr\u00e9 une multitude de plats fran\u00e7ais mijot\u00e9s et magnifiques, le travers de porc n\u2019y figure pas de ma connaissance. J\u2019esp\u00e8re vous convaincre qu\u2019il m\u00e9rite sa place \ud83d\ude09. Alors au supermarch\u00e9, id\u00e9alement, vous prendrez des travers de porc natures.  Pr\u00e9-assaisonn\u00e9 en tex-mex peut fonctionner, mais je les rincerais et remettrais mon propre assaisonnement. Aussi id\u00e9alement, les travers seront bien charnus\u2014pas toujours le cas en hypermarch\u00e9 de mon exp\u00e9rience. Le seul hypermarch\u00e9 o\u00f9 j\u2019ai vraiment trouv\u00e9 mon bonheur en France, c\u2019est Costco\u2014une enseigne grossiste am\u00e9ricaine avec deux magasins en r\u00e9gion parisienne, mais il faut s\u2019abonner (ou y aller avec un membre) pour y faire vos courses. <\/p>\n\n\n\n<p style=\"font-size:18px\">En fran\u00e7ais, le terme barbecue a \u00e9t\u00e9 emprunt\u00e9 de l\u2019anglais, mais il se peut que ce soit issu du fran\u00e7ais \u00e0 l\u2019origine ! Pour cuire un animal entier sur le feu, on met la broche de la \u00ab barbe \u00e0 queue \u00bb. Il se peut aussi que le terme anglais provienne de l\u2019espagnol <em>barbacoa.<\/em> Dans tous les cas, on adore !<\/p>\n\n\n<div id=\"recipe\"><\/div><div id=\"wprm-recipe-container-2111\"
