Cette recette se veut inauthentique, mais je r\u00e9p\u00e8te : c\u2019est d\u00e9licieux. Ce pain pita a une p\u00e2te similaire au naan indien (le pain plat servi dans tous les restos indiens), mais \u00e9tant plus \u00e9pais, le pain ressemble plus \u00e0 une pita. Le r\u00e9sultat est absolument fantastique. Ce pain pita est grill\u00e9 \u00e0 l\u2019ext\u00e9rieur et reste moelleux \u00e0 l\u2019int\u00e9rieur. Cela a commenc\u00e9 comme une qu\u00eate pour faire du naan \u00e0 la maison, mais sans four tandoor \u00e0 480 \u00b0C, c'\u00e9tait un peu compliqu\u00e9. Etal\u00e9 finement, c'\u00e9tait bon, mais souvent trop cuit et sec. Etal\u00e9 \u00e9pais et avec quelques ingr\u00e9dients cl\u00e9s pour l\u2019am\u00e9liorer, c'\u00e9tait d\u00e9licieux. Depuis, il a \u00e9t\u00e9 adopt\u00e9 chez nous comme recette de pita incontournable.<\/p>\n\n\n\n<h2 class=\"wp-block-heading has-medium-font-size\"><strong>Les trois ingr\u00e9dients cl\u00e9s pour un pain pita moelleux :<\/strong><\/h2>\n\n\n\n<p class=\"wp-block-paragraph\" style=\"font-size:18px\"><strong>Du beurre.<\/strong> Pour que le r\u00e9sultat puisse \u00eatre qualifi\u00e9 de super moelleux, j'ajoute un peu de beurre fondu ainsi que du yaourt au lait entier. La plupart des recettes requi\u00e8rent de l'huile neutre, ce qui fonctionne bien aussi, mais le beurre, c\u2019est bon. Ce gras ajout\u00e9 lubrifiera les prot\u00e9ines dans la farine, ramollira la p\u00e2te et ralentira son s\u00e9chage pendant la cuisson.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\" style=\"font-size:18px\"><strong>Du yaourt au lait entier. <\/strong>Pourquoi utiliser du yaourt ? Le yaourt aide \u00e0 ramollir la p\u00e2te \u00e0 pain sans compromettre sa capacit\u00e9 \u00e0 lever. Le yaourt d\u00e9compose un peu les prot\u00e9ines, rel\u00e2chant la structure et ramollissant la p\u00e2te en compl\u00e9ment du beurre fondu. L'acidit\u00e9 du yaourt arrondit \u00e9galement bien les saveurs.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\" style=\"font-size:18px\"><strong>Un jaune d'\u0153uf.<\/strong> Ce n\u2019est pas non plus un ingr\u00e9dient traditionnel des pitas ou des naan, mais il rend mon pain encore plus moelleux. Alternativement, vous pouvez pr\u00e9parer les pitas la veille, les garder dans un sachet plastique ferm\u00e9 et les r\u00e9chauffer dans une po\u00eale ou un grille-pain le jour J. Ajouter le yaourt, le beurre fondu et le jaune d'\u0153uf au m\u00e9lange de levure. Incorporer le m\u00e9lange de yaourt \u00e0 la farine jusqu'\u00e0 ce que le m\u00e9lange soit presque homog\u00e8ne. \u00c0 l'aide d'un batteur \u00e9lectrique muni de crochets p\u00e9trisseurs (ou d'un robot p\u00e2tissier), p\u00e9trir \u00e0 vitesse moyenne-\u00e9lev\u00e9e pendant 5 minutes.
