Du coup, ces boulettes syriennes se d\u00e9finissent par le d\u00e9licieux m\u00e9lange le sept-\u00e9pices d'Alep qui leur apporte tant de go\u00fbt. Cuites dans une d\u00e9licieuse sauce, les cerises apportent la douceur, tandis que du tamarin apporte une touche acidul\u00e9e. Servir sur du riz ou du couscous pour attraper la d\u00e9licieuse sauce. Elle est connue pour ses mezze (entr\u00e9es) servis avec du pain plat : par exemple, du houmous, du baba ghanoush, des falafels ou du fromage halloumi. Egalement tr\u00e8s connus sont leurs p\u00e2tisseries sucr\u00e9es imbib\u00e9es du sirop au miel et leurs kebabs (viandes grill\u00e9es). Ici en France, c\u2019est le <em>doner kebab<\/em> qui est bien connu (servi dans du pain), tandis qu\u2019aux Etats-Unis \u00ab kebab \u00bb est synonyme de <em>shish kebab<\/em> (brochettes de viande). Les boulettes aux cerises syriennes sont \u00e9galement appel\u00e9es kebab, bien qu'elles soient mijot\u00e9es. On les appelle kebab karaz (ou kebab bil karaz) en arabe.<\/p>\n\n\n\n<p style=\"font-size:18px\">Les boulettes syriennes en sauce aux cerises ont un lien \u00e9troit avec la cuisine juive s\u00e9farade. Cette branche de la cuisine juive utilise souvent des combinaisons aigres-douces, des fruits s\u00e9ch\u00e9s et du tamarin ainsi que des \u00e9pices comme la cannelle, le cumin et le piment de la Jama\u00efque. Et tous ces \u00e9l\u00e9ments apparaissent dans les boulettes syriennes aux cerises !<\/p>\n\n\n\n<h2 class=\"wp-block-heading has-medium-font-size\"><strong>Remarques sur les ingr\u00e9dients :<\/strong><\/h2>\n\n\n\n<p style=\"font-size:18px\">Les cerises traditionnelles (et les meilleures !) \u00e0 utiliser pour ces boulettes syriennes aux cerises sont <strong>les griottes<\/strong>, en particulier les cerises d'Alep ou de Montmorency. Celles-ci apportent une saveur riche et agr\u00e9able au plat. J'utilise ici des griottes en conserve au sirop l\u00e9ger.<\/p>\n\n\n\n<p style=\"font-size:18px\"><strong>Le sept-\u00e9pices d'Alep<\/strong> est le m\u00e9lange d'\u00e9pices qui distingue cette recette. Ce n'est pas dans toutes les recettes de boulettes syriennes en sauce aux cerises, mais c'est un go\u00fbt authentique d'Alep. Eh bien, un go\u00fbt authentique qui n\u2019a pas de liste d\u00e9finie d\u2019\u00e9pices. C\u2019est-\u00e0-dire que l\u2019identit\u00e9 des sept \u00e9pices varie d\u2019un m\u00e9lange \u00e0 l\u2019autre. Les trois incontournables sont le piment de la Jama\u00efque (tr\u00e8s proche du quatre-\u00e9pices), le poivre noir et la cannelle. Les autres \u00e9pices peuvent inclure le cumin, la cardamome, la muscade, les clous de girofle, le gingembre et parfois le galanga ou la coriandre. Ce m\u00e9lange d'\u00e9pices est aussi parfois appel\u00e9 baharat, bien que le baharat pr\u00e9sente encore plus de variations selon les r\u00e9gions et les pays. Dans cette recette, les sept \u00e9pices sont cit\u00e9es individuellement puisque je ne retrouve pas le m\u00e9lange tout-pr\u00eat en magasin par chez moi !<\/p>\n\n\n\n<p style=\"font-size:18px\">Cette recette fait \u00e9galement appel au <strong>piment d'Alep<\/strong>. Le piment d'Alep est un piment moyennement \u00e9pic\u00e9 avec des notes fruit\u00e9es. Comme il n\u2019est pas vendu partout, n\u2019h\u00e9sitez pas \u00e0 le remplacer par d\u2019autres piments s\u00e9ch\u00e9s, comme l\u2019ancho, le piment d\u2019Espelette ou encore le piment de Cayenne.<\/p>\n\n\n\n<p style=\"font-size:18px\"><strong>La p\u00e2te de tamarin<\/strong> est un ingr\u00e9dient cl\u00e9 de ces boulettes et de la sauce aux cerises, mais elle peut \u00eatre difficile \u00e0 trouver selon l'endroit o\u00f9 vous vivez. Il est tr\u00e8s aigre et l\u00e9g\u00e8rement sucr\u00e9 avec la consistance de miel. Pour substituer \u00e0 la p\u00e2te de tamarin, vous pouvez utiliser la m\u00e9lasse de grenade ou un m\u00e9lange 1:1 de jus de citron et de cassonade. Dans les deux cas, vous utiliserez la m\u00eame quantit\u00e9 que celle demand\u00e9e pour la p\u00e2te de tamarin dans la recette. <\/p>\n\n\n\n<p style=\"font-size:18px\">Pour la <strong>viande hach\u00e9e<\/strong>, je pr\u00e9f\u00e8re utiliser du b\u0153uf hach\u00e9 \u00e0 15 ou 20 % de mati\u00e8re grasse pour \u00e9viter des boulettes s\u00e8ches.<\/p>\n\n\n<div
