Les graines de moutarde, le curcuma et le gingembre r\u00e9haussent le go\u00fbt, et les olives et le jus de citron \u00e9quilibrent les notes sulfureuses du chou-fleur. On fait frire les graines de moutarde \u00e0 la po\u00eale dans de l'huile au d\u00e9but de la recette, et ces graines \u00e9claboussent comme du pop-corn. Et elles sont tr\u00e8s chaudes. Alors, \u00e9vitez la catastrophe et couvrez votre po\u00eale ! Je parle d'exp\u00e9rience. \ud83d\ude0a<\/p>\n\n\n\n<h2 class=\"wp-block-heading has-medium-font-size\"><strong>Qu\u2019est-ce que le riz de chou-fleur ?<\/strong><\/h2>\n\n\n\n<p style=\"font-size:18px\">Si vous ne connaissez pas le riz de chou-fleur, il n\u2019a rien de trop compliqu\u00e9. Il est simplement du chou-fleur cru hach\u00e9 en robot jusque les morceaux aient la taille des grains de riz. <\/p>\n\n\n\n<p style=\"font-size:18px\">Le riz de chou-fleur a ses d\u00e9buts aux USA, et avec la tendence \u00ab low-carb \u00bb (r\u00e9duit en glucides), il a gagn\u00e9 en popularit\u00e9. On peut m\u00eame trouver du riz de chou-fleur cru surgel\u00e9, mais ce n\u2019est pas encore tr\u00e8s r\u00e9pandu en France. Heureusement, c\u2019est tr\u00e8s facile \u00e0 faire maison, et beaucoup moins cher. Il suffit de h\u00e2cher le chou-fleur au robot. Voici mes deux astuces pour r\u00e9ussir sa pr\u00e9paration :<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li style=\"font-size:18px\">D\u00e9couper le chou-fleur grossi\u00e8rement avant, en morceaux de 3 \u00e0 5 cm environ. Les morceaux doivent juste \u00eatre suffisamment petit pour ne pas bloquer le hachoir du robot.<\/li>\n\n\n\n<li style=\"font-size:18px\">Quelques seconds au robot suffisent, 3 \u00e0 5 seconds en mode pulse pour moi. Dans cette recette, on fait \u00e0 la po\u00eale dans du beurre. Puisque les morceaux sont assez petits, il ne faut que 10 minutes pour cuire \u00e0 la po\u00eale.<\/p>\n\n\n\n<h2 class=\"wp-block-heading has-medium-font-size\"><strong>Comment conserver le riz de chou-fleur cru<\/strong><\/h2>\n\n\n\n<p style=\"font-size:18px\">Une fois que vous avez r\u00e9duit le chou-fleur en riz mais pas encore cuit, vous pouvez soit :<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li style=\"font-size:18px\">Faites-le cuire toute de suite<\/li>\n\n\n\n<li style=\"font-size:18px\">Conservez-le au frigo quelques jours, soit<\/li>\n\n\n\n<li style=\"font-size:18px\">Congelez-le jusqu\u2019\u00e0 3 mois (pas besoin de le blanchir en amont)<\/li>\n<\/ul>\n\n\n\n<p style=\"font-size:18px\">Avec cette recette, en fonction de la taille de votre t\u00eate de chou-fleur, vous aurez peut-\u00eatre des restes de chou-fleur cru. Les herbes et les noix sont mieux quand vous les mettez \u00e0 la derni\u00e8re minute pour le meilleur go\u00fbt et texture. Vous pouvez pr\u00e9-hacher les herbes quelques heures \u00e0 l\u2019avance et garder au frigo aussi. Placer les fleurons dans un robot culinaire et hacher-les jusqu'\u00e0 ce que le chou-fleur ait \u00e0 peu pr\u00e8s la taille d'un grain de riz, environ 3 \u00e0 5 seconds. Vous aurez peut-\u00eatre besoin de racler les bords du robot au milieu du hachage. \u00c9viter de trop hacher le chou-fleur : vous ne voulez pas une pur\u00e9e.<\/span><\/div><\/li><li id=\"wprm-recipe-2480-step-0-1\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\"><span style=\"display: block;\"><strong>Faire frire les graines de moutarde :<\/strong> Faire chauffer une \u00bd cuill\u00e8re \u00e0 soupe d'huile dans une grande po\u00eale \u00e0 feu moyen. Une fois l'huile chaude, ajouter les graines de moutarde et couvrir imm\u00e9diatement la po\u00eale. Une fois que les graines cessent d\u2019\u00e9clabousser, retirer le couvercle (vous n\u2019en aurez plus besoin).
