Le riz au lait est un classique dans de nombreuses cuisines, y compris la cuisine orientale. Malgr\u00e9 une cuisson d\u2019au moins 35 minutes, le riz ne devient pas une bouillie molle. Le lait a cependant le temps de se r\u00e9duire et de devenir d\u00e9licieusement cr\u00e9meux !<\/p>\n\n\n\n<p style=\"font-size:18px\"><strong>Astuce :<\/strong> Pour \u00e9viter de br\u00fbler le riz au lait, remuez souvent en raclant le fond, surtout lorsque le riz au lait s'\u00e9paissit vers la fin. Une spatule plate en bois fonctionne tr\u00e8s bien.<\/p>\n\n\n\n<h2 class=\"wp-block-heading has-medium-font-size\"><strong>Question science du jour : Pourquoi faut-il tellement plus de temps pour faire cuire le riz dans du lait que dans de l'eau ?<\/strong> <\/h2>\n\n\n\n<p style=\"font-size:18px\">D\u2019apr\u00e8s ce que j\u2019ai pu lire, le gras et d\u2019autres solides contenus dans le lait en sont la cause. Le riz absorbe l'eau pendant la cuisson. Cependant, le gras, etc. pr\u00e9sente dans le lait colle \u00e0 la surface du riz. Ceci emp\u00eache le riz d'absorber l'eau aussi rapidement. La cuisson est donc plus lente.<\/p>\n\n\n\n<h2 class=\"wp-block-heading has-medium-font-size\"><strong>Remarques sur les ingr\u00e9dients :<\/strong><\/h2>\n\n\n\n<ul class=\"wp-block-list\">\n<li style=\"font-size:18px\"><strong>Le riz :<\/strong> Un riz rond (riz dessert, voire un riz risotto) donnera un riz au lait plus cr\u00e9meux car il a plus d'amidon sur sa surface. Un riz long grain peut fonctionner aussi, si vous voulez utiliser cela.<\/li>\n\n\n\n<li style=\"font-size:18px\"><strong>La fleur d'oranger :<\/strong> Cet ar\u00f4me naturel tr\u00e8s populaire dans les desserts orientaux est un heureux co-produit de la distillation de l'huile essentielle de la fleur de l'orange amer. Comme avec les huiles essentielles, il en faut tr\u00e8s peu ! Ici, on ajoute cet ar\u00f4me en fin de cuisson pour \u00e9viter qu'il s'\u00e9vapore trop avec la chaleur.<\/li>\n\n\n\n<li style=\"font-size:18px\"><strong>Le lait :<\/strong> Je recommande du lait entier pour un riz au lait plus cr\u00e9meux.<\/li>\n\n\n\n<li style=\"font-size:18px\"><strong>Le sel :<\/strong> Juste une pinc\u00e9e, mais cela fait mieux ressortir tous les ar\u00f4mes.<\/li>\n\n\n\n<li style=\"font-size:18px\"><strong>Les pistaches :<\/strong> Pr\u00e9f\u00e9rez des pistaches grill\u00e9es et sal\u00e9es pour le meilleur go\u00fbt.<\/li>\n\n\n\n<li style=\"font-size:18px\"><strong>Coulis de framboise :<\/strong> I chose to use a fruit-rich, lower-sugar jam (Bonne Maman Raspberry Intense) that I heated up as my coulis. It\u2019s kind of cheating, but it was easy, tasty, and I could use the rest of the jar as normal jam. Feel free to make a homemade raspberry sauce or buy a pre-made raspberry coulis as you wish. A few fresh raspberries to serve is a lovely addition, too!<\/li>\n<\/ul>\n\n\n\n<p style=\"font-size:18px\">Ce riz au lait \u00e0 la fleur d'oranger est d\u00e9licieux m\u00eame sans les pistaches et le coulis de framboise, mais ils se marient tellement bien avec ce dessert. Couvrir la casserole pendant les 10 premi\u00e8res minutes.
