Ce souffl\u00e9 au comt\u00e9 et aux noisettes a toute la texture l\u00e9g\u00e8re et a\u00e9rienne que l'on attend d'un souffl\u00e9 fran\u00e7ais classique ainsi que le d\u00e9licieux croquant des noisettes qui tapissent le plat. Ses ar\u00f4mes fruit\u00e9s et de noisette se marient merveilleusement avec les oeufs et, bien s\u00fbr, les noisettes. Si habitez o\u00f9 le comt\u00e9 est une denr\u00e9e rare, un gruy\u00e8re ou m\u00eame un cheddar ou gouda affin\u00e9 conviendra tr\u00e8s bien. Un fromage affin\u00e9 apportera plus de go\u00fbt \u00e0 votre souffl\u00e9, mais le comt\u00e9 r\u00e2p\u00e9 standard du supermarch\u00e9 est aussi excellent dans cette recette.<\/p>\n\n\n\n<p style=\"font-size:18px\">Un ingr\u00e9dient inattendu dans ce souffl\u00e9 au fromage et aux noisettes est le yaourt. Le yaourt nous apportera une touche d'acidit\u00e9 complexe, ce qui \u00e9quilibre assez bien les saveurs. Assurez-vous surtout de retirer votre casserole du feu avant d'incorporer le yaourt pour \u00e9viter qu'il ne caille. Ce n\u2019est vraiment pas difficile \u00e0 r\u00e9aliser, par contre, et tomb\u00e9 ou gonfl\u00e9, c\u2019est absolument d\u00e9licieux. Tant que vous savez s\u00e9parer les blancs d\u2019\u0153ufs des jaunes, vous pouvez r\u00e9ussir cette recette. Suivez bien les \u00e9tapes de ma recette, gardez les conseils ci-dessous \u00e0 l\u2019esprit, et vous aurez un beau souffl\u00e9 sans stress\u00a0!<\/p>\n\n\n\n<h2 class=\"wp-block-heading has-medium-font-size\"><strong>Des astuces pour un super souffl\u00e9 :<\/strong><\/h2>\n\n\n\n<ul class=\"wp-block-list\">\n<li style=\"font-size:18px\">Le point le plus important est de NE JAMAIS ouvrir le four pendant la cuisson du souffl\u00e9. La chute en temp\u00e9rature fera d\u00e9gonfler pr\u00e9matur\u00e9ment votre souffl\u00e9. Quelle que soit la rapidit\u00e9 avec laquelle vous refermez la porte du four, votre souffl\u00e9 ne r\u00e9cup\u00e9rera pas.<\/li>\n\n\n\n<li style=\"font-size:18px\">Assurez-vous que votre b\u00e9chamel soit bien lisse pour que le souffl\u00e9 gonfle au mieux.<\/li>\n\n\n\n<li style=\"font-size:18px\">Pensez \u00e0 bien beurrer votre\/vos moule(s) pour que votre souffl\u00e9 ne colle pas. Les noisettes parsem\u00e9es sur le beurre permettent \u00e9galement d'\u00e9viter de coller. Le parmesan r\u00e2p\u00e9 fonctionne \u00e9galement tr\u00e8s bien.<\/li>\n\n\n\n<li style=\"font-size:18px\">Utilisez des \u0153ufs \u00e0 temp\u00e9rature ambiante, fouett\u00e9s jusqu'\u00e0 obtenir des pics mous (et non fermes) pour une meilleure lev\u00e9e.<\/li>\n\n\n\n<li style=\"font-size:18px\">Lorsque vous fouettez les blancs d\u2019\u0153ufs, il ne doit y avoir aucune mati\u00e8re grasse (tel que du jaune d\u2019\u0153uf), pas m\u00eame un grain, sinon ils ne monteront pas correctement en neige. Chaque souffl\u00e9 se d\u00e9gonfle. Id\u00e9alement, vous voulez qu\u2019il reste gonfl\u00e9 suffisamment longtemps pour le mettre sur la table. Dans la pratique, au moment o\u00f9 il aura refroidi assez pour pouvoir le manger, il se sera un peu d\u00e9gonfl\u00e9. Mais tout va bien, la texture \u00e0 l\u2019int\u00e9rieur est toujours l\u00e9g\u00e8re et a\u00e9r\u00e9e. Ainsi, m\u00eame d\u00e9gonfl\u00e9, un souffl\u00e9, c'est d\u00e9licieux.<\/p>\n\n\n\n<p style=\"font-size:18px\">Un souffl\u00e9 gonfle lorsque l'eau de la b\u00e9chamel se transforme en vapeur et que l'air emprisonn\u00e9 dans les blancs d'\u0153ufs se dilate. Une fois le souffl\u00e9 sorti du four, il refroidit et la baisse de temp\u00e9rature fait r\u00e9tracter l'air chaud et condenser la vapeur restante. La p\u00e2te cuite n\u2019est tout simplement pas assez solide pour tenir, alors elle tombe. En revanche, la texture l\u00e9g\u00e8re et moelleuse d\u2019un souffl\u00e9 est l\u2019une des raisons pour lesquelles nous l\u2019adorons.<\/p>\n\n\n\n<p style=\"font-size:18px\">J'esp\u00e8re que Fouetter imm\u00e9diatement les jaunes pour \u00e9viter qu'ils ne prennent.
