Ils vont tr\u00e8s bien, sur ma <a href=\"https:\/\/www.eatsfromelsewhere.com\/fr\/lentil-salad-with-goat-cheese-roasted-peppers-pickled-onions\/\" title=\"Salade de lentilles au ch\u00e8vre frais\">French-style lentil and goat cheese salad<\/a>, ou sur un burrito ou un sandwich si vous avez besoin d'inspiration !<\/p>\n\n\n\n<p style=\"font-size:18px\">Conserver des aliments en saumure est une pratique traditionnelle, que ce soit avec du vinaigre, comme dans cette recette, ou par lacto-fermentation, comme pour le kimchi ou la choucroute. La conservation en saumure peut \u00e9galement am\u00e9liorer la digestibilit\u00e9 de ces aliments sans les cuire. En effet, apr\u00e8s avoir mang\u00e9 ces oignons marin\u00e9s, beaucoup moins de risque d\u2019avoir la redoutable haleine \u00e0 l\u2019oignon qu\u2019avec des oignons crus !<\/p>\n\n\n\n<h2 class=\"wp-block-heading has-medium-font-size\"><strong>Pourquoi les oignons deviennent-ils roses ?<\/strong><\/h2>\n\n\n\n<p style=\"font-size:18px\">Dans le cas des oignons rouges, l\u2019acide ac\u00e9tique du vinaigre r\u00e9agit avec les pigments anthocyanes de l\u2019oignon rouge. \u00c0 un pH aussi acide, les pigments vont du violet au rose vif. Le m\u00eame ph\u00e9nom\u00e8ne se produit \u00e9galement chez le chou rouge. \ud83d\ude09<\/p>\n\n\n\n<h2 class=\"wp-block-heading has-medium-font-size\"><strong>Remarques sur les ingr\u00e9dients :<\/strong><\/h2>\n\n\n\n<ul class=\"wp-block-list\">\n<li style=\"font-size:18px\"><strong>Vinaigre :<\/strong> Ici, nous utilisons du vinaigre blanc pour mariner les oignons rouges, mais le vinaigre de cidre ou le vinaigre de vin rouge peuvent \u00e9galement fonctionner tr\u00e8s bien, selon la saveur souhait\u00e9e. \u00c9vitez simplement le vinaigre doux (avec moins de 5 % d\u2019acidit\u00e9). Les oignons ne marinent pas (ils ne deviennent pas roses). Je l'ai essay\u00e9 une fois et les oignons \u00e9taient comme crus.<\/li>\n\n\n\n<li style=\"font-size:18px\"><strong>Eau :<\/strong> Notre saumure est moiti\u00e9 eau et moiti\u00e9 vinaigre ici pour r\u00e9duire le c\u00f4t\u00e9 aigre du vinaigre. Vous pouvez utiliser plus de vinaigre si vous le souhaitez, mais pas moins. Un peu d'eau bouillante vers\u00e9e sur les oignons dans une passoire pour commencer permet \u00e9galement d'acc\u00e9l\u00e9rer l'action du vinaigre apr\u00e8s sans aller jusqu'\u00e0 ramollir les oignons.<\/li>\n\n\n\n<li style=\"font-size:18px\"><strong>Sel et sucre :<\/strong> Les deux aident \u00e0 conserver les oignons tout en ajoutant de la saveur.<\/li>\n\n\n\n<li style=\"font-size:18px\"><strong>Aromates :<\/strong> Les herbes et les \u00e9pices enti\u00e8res sont l\u00e0 pour ajouter une couche suppl\u00e9mentaire de saveur. Ici, nous employons des \u00e9pices de base comme le laurier, le poivre et le thym pour que ces oignons rouges marin\u00e9s se marient avec tout. La recette demande des grains de poivre l\u00e9g\u00e8rement \u00e9cras\u00e9s : c'est pour que la saveur s'\u00e9chappe plus facilement. N'h\u00e9sitez pas \u00e0 faire votre propre m\u00e9lange d'\u00e9pices selon votre plat !<\/li>\n<\/ul>\n\n\n\n<h2 class=\"wp-block-heading has-medium-font-size\"><strong>Comment conserver :<\/strong><\/h2>\n\n\n\n<p style=\"font-size:18px\">Ces oignons rouges marin\u00e9s se garderont au moins deux semaines. Remplissez-les dans un bocal propre avec leur saumure, fermez bien le couvercle et conservez-les au r\u00e9frig\u00e9rateur.
