Cette sauce pour p\u00e2tes a la riche saveur italienne que vous attendez sur des p\u00e2tes, mais renforc\u00e9e par un ingr\u00e9dient de la cuisine japonaise. Cette sauce a une excellente saveur de tomate, ainsi que la fra\u00eecheur estivale du basilic et la richesse d'une touche de vin rouge. Le mot vient du japonais et signifie \u00ab go\u00fbt savoureux et d\u00e9licieux \u00bb. La cuisine japonaise met souvent en valeur cette saveur, avec des ingr\u00e9dients de base comme la sauce soja et le miso qui apportent une bonne touche d\u2019umami. Mais la saveur umami ne se trouve pas qu'au Japon. On retrouve \u00e9galement deux vedettes de l\u2019umami dans la cuisine italienne : les tomates et le parmesan. En fusionnant le meilleur des deux mondes, j\u2019ai cr\u00e9\u00e9 ma d\u00e9licieuse sauce tomate umami. \ud83d\ude0a<\/p>\n\n\n\n<h2 class=\"wp-block-heading has-medium-font-size\"><strong>L'ingr\u00e9dient secret<\/strong><\/h2>\n\n\n\n<p style=\"font-size:18px\">Alors, quel est l'ingr\u00e9dient secret qui booste tellement bien le c\u00f4t\u00e9 savoureux de cette sauce tomate ? Une grosse cuiller\u00e9e de p\u00e2te de miso. Le miso rehausse vraiment la saveur et se marie tr\u00e8s bien avec les ar\u00f4mes de la tomate. Pourtant, vous ne l'identifierez jamais. La saveur italienne domine.<\/p>\n\n\n\n<p style=\"font-size:18px\">If you can\u2019t find miso paste by itself at the grocery store, you can find it in instant miso soup. It\u2019s in a packet inside the soup package, but this can get a bit expensive. <\/p>\n\n\n\n<p style=\"font-size:18px\">La p\u00e2te miso est un aliment de base historique de la cuisine japonaise. Il s'agit essentiellement d'une p\u00e2te de soja ferment\u00e9e avec un ferment appel\u00e9 du koji (<em>Aspergillus oryzae<\/em>). Le miso peut contenir d'autres ingr\u00e9dients, comme du riz cuit et des algues, et toujours du sel. Traditionnellement, le miso est utilis\u00e9 dans des plats comme la soupe miso \u00e9ponyme ou dans les ramen, les marinades ou m\u00eame des desserts.<\/p>\n\n\n\n<h3 class=\"wp-block-heading has-medium-font-size\"><strong>C'est quoi le go\u00fbt de la p\u00e2te miso ?<\/strong><\/h3>\n\n\n\n<p style=\"font-size:18px\">Selon les ingr\u00e9dients et les conditions de fermentation, la saveur peut changer radicalement. Elle est toujours savoureuse (umami) et sal\u00e9e, mais peut aussi \u00eatre fruit\u00e9e, piquante, terreuse ou m\u00eame sucr\u00e9e. J'ai utilis\u00e9 de la p\u00e2te de miso du commerce (marque Hikari), et la saveur \u00e9tait principalement savoureux et sal\u00e9e, mais avec un l\u00e9ger piquant d\u00fb \u00e0 la fermentation.<\/p>\n\n\n\n<h2 class=\"wp-block-heading has-medium-font-size\"><strong>D'autres ingr\u00e9dients cl\u00e9 pour cette sauce tomate umami<\/strong><\/h2>\n\n\n\n<p style=\"font-size:18px\">M\u00eame que la p\u00e2te de miso soit l\u2019ingr\u00e9dient inattendu, il existe encore plusieurs autres ingr\u00e9dients cl\u00e9s :<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li style=\"font-size:18px\">Tomates : l\u2019autre puissance umami ici<\/li>\n\n\n\n<li style=\"font-size:18px\">Vin rouge : pour ajouter de la richesse, de la rondeur et un peu plus d'umami<\/li>\n\n\n\n<li style=\"font-size:18px\">Parmesan (parmiggiano reggiano) : pour encore plus d'umami<\/li>\n\n\n\n<li style=\"font-size:18px\">Basilic : pour son fabuleux go\u00fbt frais<\/li>\n\n\n\n<li style=\"font-size:18px\">Ail et oignon : pour leur note sulfur\u00e9 classique<\/li>\n\n\n\n<li style=\"font-size:18px\">Carotte : pour ajouter une touche de douceur<\/li>\n\n\n\n<li style=\"font-size:18px\">Beurre : non seulement il rend votre sauce riche et velout\u00e9e, mais il permet \u00e9galement d'\u00e9viter que les l\u00e9gumes ne brunissent (\u00e0 l'\u00e9tape avant d'ajouter les tomates)<\/li>\n<\/ul>\n\n\n\n<p style=\"font-size:18px\">Vous pouvez augmenter la saveur umami davantage en faisant mijoter des boulettes de viande dans la sauce ou en saupoudrant de copeaux de parmesan. Personnellement, j'aime la sauce tomate avec des morceaux, mais les plus jeunes membres de ma famille ne la mangeront que lisse. Les deux fa\u00e7ons sont excellentes ! J\u2019ai essay\u00e9 ma recette avec 1 cuill\u00e8re \u00e0 soupe de sauce Worcestershire au lieu de la p\u00e2te miso.
