Etant am\u00e9ricaine, c\u2019est normal. Mais, oh l\u00e0, le scandale quand je voulais faire une quiche pour Monsieur et je commen\u00e7ais \u00e0 ajouter de la cr\u00e8me liquide. \u00ab Mais, ce n\u2019est pas de la cr\u00e8me fra\u00eeche !! \u00bb Puis du lait : \u00ab Noooon ! Il n\u2019y a pas de lait dans une quiche lorraine ! \u00bb Bon, il a aim\u00e9 ma \u00ab pas quiche \u00bb, mais j\u2019entends depuis quels sont les vrais ingr\u00e9dients. Avec un peu de recherche, j\u2019ai d\u00e9couvert que m\u00eames d\u2019autres recettes fran\u00e7aises n\u2019\u00e9taient pas toutes comme on fait en Lorraine.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\" style=\"font-size:18px\">Apr\u00e8s tout \u00e7a, je vous partage ci-dessous comment faire une quiche lorraine traditionnelle. Cependant, on trouve plein de variations. Voici les points cl\u00e9s pour faire une quiche lorraine traditionnelle et quelques diff\u00e9rences anecdotiques avec la quiche lorraine \u00e0 l'am\u00e9ricaine :<\/p>\n\n\n\n<h3 class=\"wp-block-heading has-medium-font-size\">Les bases :<\/h3>\n\n\n\n<ul style=\"font-size:18px\" class=\"wp-block-list\">\n<li><strong>Format :<\/strong> En France, la quiche lorraine est fine, tandis que ce que j\u2019ai connu aux Etats-Unis est assez \u00e9pais. Ma belle-m\u00e8re lorraine n\u2019utilise que 2 ou 3 \u0153ufs pour sa quiche versus plut\u00f4t 5 ou 6 pour la version am\u00e9ricaine.<\/li>\n\n\n\n<li><strong>Quand :<\/strong> Une quiche fine, \u00e7a marche bien en France car c\u2019est souvent servi \u00e0 l\u2019ap\u00e9ro, en entr\u00e9e, voire un repas l\u00e9ger. Aux Etats-Unis, la quiche est un plat principal, tr\u00e8s populaire pour un petit d\u00e9jeuner gourmand ou un brunch.<\/li>\n<\/ul>\n\n\n\n<h3 class=\"wp-block-heading has-medium-font-size\">La p\u00e2te :<\/h3>\n\n\n\n<ul style=\"font-size:18px\" class=\"wp-block-list\">\n<li class=\"translation-block\"><strong>La p\u00e2te \u00e0 tarte :<\/strong> Si vous \u00eates \u00e9quipe p\u00e2te bris\u00e9e ou \u00e9quipe p\u00e2te feuillet\u00e9e, les deux font une excellente tarte. Si on veut faire une quiche lorraine traditionnelle, par contre, c\u2019est p\u00e2te bris\u00e9e qu\u2019on choisit. En plus, c\u2019est assez facile \u00e0 faire maison ! La recette est ci-dessous:)<\/li>\n<\/ul>\n\n\n\n<h3 class=\"wp-block-heading has-medium-font-size\">La migaine :<\/h3>\n\n\n\n<ul style=\"font-size:18px\" class=\"wp-block-list\">\n<li><strong>Cream & milk:<\/strong> Pour ma belle-famille de Lorraine, il n\u2019y a qu\u2019un choix : la cr\u00e8me fra\u00eeche enti\u00e8re. Pas de lait, pas de cr\u00e8me fluide. Eventuellement de la cr\u00e8me fra\u00eeche l\u00e9g\u00e8re, mais encore ce n\u2019est pas \u00ab la vraie quiche \u00bb. Parcourant d\u2019autres recettes fran\u00e7aises pour la quiche lorraine, j\u2019ai remarqu\u00e9 que beaucoup utilise de la cr\u00e8me fluide. J\u2019avais fait pareil avant aux US aussi. Cependant, Monsieur m\u2019assure que ces chefs fran\u00e7ais qui utilisent de la cr\u00e8me fluide ne doivent pas \u00eatre de la Lorraine. \ud83d\ude09<\/li>\n\n\n\n<li><strong>Le porc :<\/strong> En Lorraine, les lardons figurent dans presque tous les plats r\u00e9gionaux. Pour la quiche lorraine, on choisit des lardons fum\u00e9s. En France, je n\u2019ai jamais vu une quiche lorraine sans lardons. Aux Etats-Unis, c\u2019\u00e9tait diff\u00e9rent puisque les lardons sont peu connus l\u00e0-bas. Soit on met des d\u00e9s de jambon, soit de la poitrine fum\u00e9e bien croustillante \u2013 bon, mais pas pareil. Oui, c\u2019est tr\u00e8s commun d\u2019en ajouter (et moi, j\u2019adore), mais ce n\u2019est pas traditionnelle. Si on veut mettre du fromage, on peut, bien s\u00fbr, en mettre par-dessus. Mettre le fromage entre la p\u00e2te et le m\u00e9lange d\u2019\u0153ufs est aussi d\u00e9licieux ; le fromage est cens\u00e9 imperm\u00e9abiliser la p\u00e2te.<\/li>\n\n\n\n<li><strong>Du noix de muscade :<\/strong> Ce n\u2019est pas traditionnel, mais on peut le voir dans des recettes fran\u00e7aises de temps en temps. Apr\u00e8s tout, c\u2019est une \u00e9pice classique pour des \u0153ufs + cr\u00e8me.<\/li>\n\n\n\n<li><strong>D\u2019autres ingr\u00e9dients : <\/strong>Oignons, \u00e9chalote, persil, ciboulette, piment. Non. Surtout pas dans la quiche lorraine traditionnelle. C\u2019est vrai que ce sera moins authentique, mais je suis consciente que, au moins aux Etats-Unis, la cr\u00e8me fra\u00eeche est difficile \u00e0 trouver. Voici quatre options simples pour substituer :<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li style=\"font-size:18px\"><strong>\u00ab Sour cream \u00bb \u00e0 30% mati\u00e8re grasse :<\/strong> \u00ab Cr\u00e8me aigre \u00bb ou \u00ab cr\u00e8me sure \u00bb, c\u2019est tr\u00e8s proche \u00e0 la cr\u00e8me fra\u00eeche, mais pas toujours facile \u00e0 trouver \u00e0 30% MG. Le \u00ab sour cream \u00bb standard est plus proche \u00e0 la cr\u00e8me fra\u00eeche l\u00e9g\u00e8re.<\/li>\n\n\n\n<li style=\"font-size:18px\"><strong>Cr\u00e8me enti\u00e8re fluide :<\/strong> Le substitut le plus facile, mais qui manque la pointe d\u2019acidit\u00e9<\/li>\n\n\n\n<li style=\"font-size:18px\"><strong>Cr\u00e8me enti\u00e8re fluide + jus de citron :<\/strong> Le jus de citron am\u00e8ne la pointe d\u2019acidit\u00e9 et aide \u00e0 \u00e9paissir la cr\u00e8me. Ajoutez le jus de citron petit \u00e0 petit tout en fouettant jusqu\u2019\u00e0 ce que la cr\u00e8me s\u2019\u00e9paississe un peu. (Pour cette recette, il faudrait environ 1 cuill\u00e8re \u00e0 soupe de jus de citron pour 235 g cr\u00e8me fluide.) Il est important d\u2019ajouter le jus de citron pendant qu\u2019on fouette pour \u00e9viter de cailler la cr\u00e8me. Et ne fouettez pas trop longtemps au risque de faire de la cr\u00e8me fouett\u00e9e.<\/li>\n\n\n\n<li style=\"font-size:18px\"><strong>Fromage \u00e0 p\u00e2te fra\u00eeche + lait :<\/strong> D\u00e9layer un fromage \u00e0 p\u00e2te fra\u00eeche type St M\u00f4ret avec un peu de lait jusque vous avez la bonne texture. (Pour cette recette, environ 2 c. \u00e0 soupe de lait pour 220 g de fromage.) Le fromage am\u00e8ne un peu de prot\u00e9ine suppl\u00e9mentaire \u00e0 votre quiche, ce qui pourra changer sa texture. J\u2019ai vu cette substitution en ligne \u2013 je ne l\u2019ai pas essay\u00e9 moi-m\u00eame encore, mais l\u2019id\u00e9e me semble bien.<\/li>\n<\/ul>\n\n\n\n<h2 class=\"wp-block-heading has-medium-font-size\"><strong> Bon app\u00e9tit !<\/strong><\/h2>\n\n\n\n<p class=\"wp-block-paragraph\" style=\"font-size:18px\">Maintenant que vous savez ce qui fait une authentique quiche lorraine, passons \u00e0 la cuisine !<\/p>\n\n\n\n<p class=\"wp-block-paragraph\" style=\"font-size:18px\">Vous avez r\u00e9aliser cette recette ?
