Les oignons caram\u00e9lis\u00e9s au fond de la po\u00eale et les figues s\u00e9ch\u00e9es apportent une touche de douceur. Le fromage de ch\u00e8vre et des olives compl\u00e8tent le c\u00f4t\u00e9 sal\u00e9. Sous le tout se trouve une p\u00e2te feuillet\u00e9e bien beurr\u00e9e et croustillante.<\/p>\n\n\n\n<p style=\"font-size:18px\">Cette tarte tatin aux oignons caram\u00e9lis\u00e9s se pr\u00e9sente \u00e9l\u00e9gante, mais c\u2019est un plat pas trop difficile \u00e0 pr\u00e9parer qui se fait dans une seule po\u00eale. On la cuit avec la cro\u00fbte sur le dessus, puis on la retourne pour d\u00e9mouler, et voil\u00e0, la cro\u00fbte se retrouve en dessous.<\/p>\n\n\n\n<p style=\"font-size:18px\">La tarte tatin originale \u00e9tait aux pommes, mais aujourd'hui, il existe d'innombrables versions sucr\u00e9es et sal\u00e9es. Ce type de tarte est si bon parce que la cro\u00fbte est parfaitement croustillante, pas d\u00e9tremp\u00e9e, et la garniture obtient une belle caram\u00e9lisation.<\/p>\n\n\n\n<p style=\"font-size:18px\">La tarte tatin est assez simple \u00e0 pr\u00e9parer : Commencez par faire cuire la garniture dans une po\u00eale sur le feu, recouvrez-la d'une p\u00e2te \u00e0 tarte, puis mettez le tout au four (ou transf\u00e9rez-le dans un plat \u00e0 tarte). Une fois la cuisson termin\u00e9e, retournez d\u00e9licatement la tarte sur une assiette de service.<\/p>\n\n\n\n<h2 class=\"wp-block-heading has-medium-font-size\"><strong>La petite histoire de la tarte tatin<\/strong><\/h2>\n\n\n\n<p style=\"font-size:18px\">La tarte tatin doit son nom aux s\u0153urs Tatin qui tenaient un h\u00f4tel-restaurant de 1894 \u00e0 1906 \u00e0 Lamotte-Beuvron (\u00e0 deux heures de voiture au sud de Paris). La version populaire de l'histoire raconte que l'une des s\u0153urs pr\u00e9parait une tarte aux pommes, qu'elle oublia la cro\u00fbte, puis la posa sur le dessus pour corriger son erreur, et voil\u00e0 que la tarte tatin (ou Tatin) \u00e9tait n\u00e9e. <\/p>\n\n\n\n<p style=\"font-size:18px\">L\u2019histoire plus probable, cependant, est que cette tarte \u00e0 l'envers \u00e9tait depuis longtemps une sp\u00e9cialit\u00e9 r\u00e9gionale, mais que ce sont les s\u0153urs Tatin qui l\u2019ont rendue c\u00e9l\u00e8bre\u2026 plus ou moins. L\u2019histoire se poursuit : c\u2019est un propri\u00e9taire de restaurant parisien sournois qui adorait cette tarte, mais les s\u0153urs ne voulaient pas lui donner la recette. Le propri\u00e9taire du restaurant parisien n\u2019a pas abandonn\u00e9 : il a envoy\u00e9 son p\u00e2tissier se faire passer pour le jardinier pour voler la recette. Cela permettra au fond de caram\u00e9liser mieux.<\/li>\n\n\n\n<li style=\"font-size:18px\">Assurez-vous que vos oignons commencent \u00e0 prendre de la couleur avant d'\u00e9teindre le feu. Les oignons finissent de caram\u00e9liser au four, mais ils doivent \u00eatre d\u00e9j\u00e0 assez dor\u00e9s avant d'y entrer.<\/li>\n\n\n\n<li style=\"font-size:18px\">Aidez les oignons \u00e0 bien caram\u00e9liser en ajoutant une cuill\u00e8re \u00e0 soupe de sucre. Normalement, je n\u2019ajoute pas de sucre lorsque je caram\u00e9lise des oignons, mais je le fais dans cette recette car cela fonctionne bien en termes de go\u00fbt.
