Parfaits pour un go\u00fbter ou un dessert ! Ces biscuits sont bien dor\u00e9s \u00e0 l'ext\u00e9rieur et moelleux \u00e0 l'int\u00e9rieur. Les saveurs de beurre de cacahu\u00e8te et de banane sont subtiles, et les p\u00e9pites de chocolat sont g\u00e9n\u00e9reuses pour le plus grand plaisir des amateurs de chocolat. En g\u00e9n\u00e9ral, pour la p\u00e2tisserie, on conseille d'utiliser des bananes bien m\u00fbres, presque noires. Vous pouvez en utiliser\u00a0: vos biscuits seront un peu plus sucr\u00e9s et auront un go\u00fbt de banane plus prononc\u00e9, parfois m\u00eame l\u00e9g\u00e8rement ferment\u00e9. Une banane moins m\u00fbre (comme j'ai utilis\u00e9) contient moins de sucres simples et plus de fibres (donc, un pouvoir sucrant moindre). \u00c0 vous de choisir\u00a0!<\/p>\n\n\n\n<h2 class=\"wp-block-heading has-medium-font-size\"><strong>Astuces pour de supers cookies banane beurre de cacahu\u00e8te<\/strong><\/h2>\n\n\n\n<ul class=\"wp-block-list\">\n<li style=\"font-size:18px\"><strong>Ne pas trop m\u00e9langer la p\u00e2te.<\/strong> C'est le point le plus important pour r\u00e9ussir presque tous les cookies am\u00e9ricains. Trop m\u00e9langer d\u00e9veloppe le gluten de la farine (comme pour le pain), ce qui rend vos biscuits \u00e9lastiques au lieu d'\u00eatre moelleux et tendres.<\/li>\n\n\n\n<li style=\"font-size:18px\"><strong>Suivre la recette.<\/strong> En p\u00e2tisserie, les mesures doivent \u00eatre pr\u00e9cises pour obtenir les r\u00e9sultats escompt\u00e9s. Je recommande utiliser des cuill\u00e8res mesures pour les petites quantit\u00e9s.\ud83d\ude09<\/li>\n\n\n\n<li style=\"font-size:18px\"><strong>Peser les ingr\u00e9dients<\/strong> comme la farine et le beurre sur une balance de cuisine. Plus besoin de se demander si farine s'est tass\u00e9 dans la tasse (car, oui, \u00e7a peut gonfler le poids par 10% ou plus).<\/li>\n\n\n\n<li style=\"font-size:18px\">Lorsque vous hachez le chocolat, utilisez tout, m\u00eame les fines copeaux qui apparaissent in\u00e9vitablement. (J'esp\u00e8re toutefois que personne ne songerait \u00e0 jeter du chocolat !)<\/li>\n\n\n\n<li style=\"font-size:18px\">J'ai utilis\u00e9 <strong>un pur beurre de cachu\u00e8te lisse<\/strong> (100% cacahu\u00e8te) pour cette recette. Je recommande si vous en trouvez pour \u00e9viter la quantit\u00e9 variable de sucr\u00e9 et sel ajout\u00e9. Si vous utilisez du beurre de cacahu\u00e8te sal\u00e9, r\u00e9duisez la quantit\u00e9 de sel de \u00be c. \u00e0 caf\u00e9 \u00e0 \u00bd c. \u00e0 caf\u00e9. Vous pourriez ajuster le sucre aussi, mais pas la peine pour 2 grammes de sucre prenant la marque que j'ai chez moi (Menguy's).<\/li>\n\n\n\n<li style=\"font-size:18px\"><strong>\u00c9crasez les bananes avant de les ajouter<\/strong> \u00e0 la p\u00e2te. Prenez une recette classique am\u00e9ricaine de cookies moelleux aux p\u00e9pites de chocolat. Pr\u00e9par\u00e9 avec de la farine fran\u00e7aise, vous obtenez un r\u00e9sultat plus proche d'une galette aux p\u00e9pites de chocolat. Les cookies ont tendance \u00e0 s'\u00e9taler davantage en France, et c'est d\u00fb \u00e0 la farine. Les deux pays n'utilisent pas les m\u00eames vari\u00e9t\u00e9s de bl\u00e9. En cons\u00e9quence, la teneur en prot\u00e9ines de la farine est l\u00e9g\u00e8rement diff\u00e9rente (plus \u00e9lev\u00e9e aux \u00c9tats-Unis), et je soup\u00e7onne que l'absorption d'humidit\u00e9 n'est pas tout \u00e0 fait la m\u00eame non plus. Une solution partielle consiste \u00e0 r\u00e9duire la quantit\u00e9 de sucre ou \u00e0 bien r\u00e9frig\u00e9rer la p\u00e2te.<\/p>\n\n\n\n<p style=\"font-size:18px\">Pour \u00e9viter que la p\u00e2te ne s'\u00e9tale trop, le beurre de cacahu\u00e8te fonctionne bien. Riche en prot\u00e9ines et en fibres, il permet \u00e0 la p\u00e2te de conserver sa forme \u00e0 la cuisson. Dans ces cookies banane-beurre de cacahu\u00e8te, j'utilise moiti\u00e9 beurre de cacahu\u00e8te, moiti\u00e9 beurre, ce qui leur donne juste ce qu'il faut d'\u00e9talement pour un r\u00e9sultat parfait. Bien s\u00fbr, je n'utilise pas de beurre de cachu\u00e8te dans toutes mes recettes de cookies, mais celle-ci est vraiment d\u00e9licieuse\u00a0!<\/p>\n\n\n\n<p style=\"font-size:18px\">(Oui, les Fran\u00e7ais ont de d\u00e9licieuses recettes de sabl\u00e9s et de galettes qui ne s\u2019\u00e9talent pas. Ils utilisent beaucoup plus de farine (et moins de beurre \ud83d\ude09) qu\u2019une recette am\u00e9ricaine de sabl\u00e9s.)<\/p>\n\n\n\n<p style=\"font-size:18px\">Le point important ici est que cette recette de cookies banane-beurre de cacahu\u00e8te devrait fonctionner aussi bien avec des ingr\u00e9dients fran\u00e7ais qu'am\u00e9ricains. \u00c9tant bas\u00e9e en France, je n'ai test\u00e9 la recette qu'avec de la farine fran\u00e7aise (j'utilise du T65 en g\u00e9n\u00e9ral).
